Pasta Soup
Heat 1-2 tablespoons of olive oil over medium heat in a large pot. Add ginger
and Hing and then add carrots, broccoli, asparagus, beans ( any veggies) and cook
on medium, stirring occasionally, until the vegetables soften, approx 10
minutes. Then add black-eyed beans (you can skip this- I added since I had
soaked ones). Next add tomato sauce and 5 cups of plain water along with bay leaf, basil, and
oregano. Add pepper powder and chili flakes and salt. Bring to a boil, then
lower the heat and simmer uncovered for 15-20 minutes, until the vegetables are
tender. While your soup boils, bring a pot of water to boil and cook your
pasta. Add the cooked pasta and heat through. If the soup is too thick, add an
extra cup of vegetable broth or water. Offer and serve hot.
