Ghutti vankaya

 



 Ingredients :

Brinjals 

Tomatos

Peanuts 2-3tsp

sesame seeds 3-4tsp

coconut-1tsp

Shahi Jeera-2tsp

Dhaniya-1tsp

Regural jeera-1tsp

 Cloves -1/4tsp

Cinnamon-1/4tsp

 Cardamon -1/4tsp

Tamarind -small Ball Ginger

  Salt 

Chillipowder 

Hing 

Turmeric

 Yogurt-2-3 tbsp

 Method :

Roast a handful of shelled peanuts, 2-3 tsp or a little sesame seeds, 3-4 sp coconut , 1 tsp shahi jeera , 2 tsp or some dhaniya , 1 tsp regular jeera , few cloves cinnamon cardamom,  a little tamarind ( small ball) and ginger , 2-3 red chilies, 1 green chili , roast till golden and grind to a smooth paste . Add oil in a pan and roast the brinjals till tender with salt . Add the white paste and simmer . Add salt , chili powder if you want more , hing, turmeric . Add some 2-3 ladleful of yogurt and simmer . You can grind the white paste with yogurt if you want too . Salt check

 It’s just for flavour  . Many use tomatoes instead of yogurt . Tamarind is usually less
