Kuttu Rajgira Veggies Patties





INGREDIENTS:

3/4 cup rajgira flour
3/4 cup kuttu ( buckwheat) flour

1 cup grated carrots
1 cup grated radish ( muli)
2 large boiled potatoes

about 1 tbsp each:

Chopped green chili
Chopped coriander
Fine chopped ginger

Ekadashi masala ( roasted & powdered  cumin seeds, coriander seeds & black pepper)-1 tbsp

Pink salt as per taste ( I used @1 1/2 tbsp)


INSTRUCTIONS :

( makes about 20 patties)

Take all above ingredients in a mixing bowl and mix well. Make round patties. If the mixture is too dry you can add some boiled potatoes. If the mixture is too wet and patties too sticky, add some rajgira/ kuttu flour.

Deep fry or shallow fry the patties on low to medium heat. Kuttu takes time to cook, low heat will ensure patties are cooked from inside.

Serve hot with cucumber raita ( grated cucumber in yogurt with salt & cumin powder/ ekadashi masala) OR serve with ekadashi tomato chutney🙏
