Ekadashi Veggie Whey Soup




Ingredients :

Oil 

Ginger

Celery 

Carrot 

Red Bell Peppers 

Green Bell  Peppers 

Broccoli 

Roasted jeera powder

 Red Chilli Powder

 Dhania Powder

 Black Pepper powder 

Fresh Pudina 

Italian Seasoning 

 Salt 

Tomato Paste 

Lemon Juice 

Method :

Please save the whey which comes in paneer making process (make sure you use lemon juice to make paneer as we do not want to use grain-based vinegar for Ekadashi purpose). This whey is extremely nutritious with protein & vitamins, so don't waste it. In a deep pan, add oil, saute ginger chopped, add veggies of your choice & saute. I used today celery, carrot, red & green bell peppers, broccoli - all chopped into small pieces. Add salt, roasted jeera pw, little red chili pw, dhania pw, black pepper pw & fresh pudina leaves torn or dried whichever available (can play with the spices & can make it western version by adding Italian seasoning, black pepper, salt etc.) Whey is naturally sour, so need not add any sour ingredient but if we are using water instead of whey, use tomato paste or lemon juice for mild sourness to gove a tangy flavor. Bring to boil & serve hot with love💗
