Coriander Chutney
*Coriander chutney *
Ingredients
¾ cup coriander leaves (cilantro)
¾ cup grated coconut, fresh or frozen,
1 medium tomato
3-4 red chili,
½ inch ginger, chopped
Tamarind - small size
1.5 or 2 tablespoons of roasted chana dal,
2- tablespoons Urad dal
1/2teaspoon - Mustard
1 spoon coriander powder,
1/2 spoon cumin powder
½ teaspoon lemon juice or add as required
For Tempering
½ teaspoon mustard seeds
¾ teaspoon urad dal (split and husked black gram)
8 to 10 curry leaves
1 pinch asafoetida (Hing)
1 tablespoon oil
Method :
Cut tomatoes into big pieces.
In a kadhai put one teaspoon oil and fry Urad dhal till it turns slightly red. Add Red chillies and fry for a while. Then add tamarind and fry that too for a second. Then add cut tomatoes and asafoetida powder and fry for two to three minutes on a low flame.
Add coriander leaves and fry just for 2-3 mins, here u can add coriander & cumin power Switch off the stove. Allow cooling. Add a teaspoon of salt or as required add grated coconut or pieces, Sugar, lemon juice, and 1/4 cup water if required grind all together to a paste.
Heat oil in a small frying pan.
Add the mustard seeds & urad dal.
Let the mustard seeds splutter and the urad dal get browned.
Add asafoetida and curry leaves.
Fry for some seconds.
Pour this tempering mixture along with the oil, over the chutney and stir.
Serve the chutney with dosa, vada, or with Rice to lord 🙏
