Pumpkin Bread






 Pumpkin bread recipe

Ingredients

* 1 1/2 cups all-purpose flour

* 1 1/2 teaspoons baking powder

* 1/2 teaspoon salt

* 1/4 teaspoon baking soda

* 2 teaspoons pumpkin pie spice ( I used cinnamon, dry ginger, clove mix instead)

* 6 tablespoons unsalted butter, softened (see note)

* 1 1/2 cups sugar

* 1/4 cup yogurt

* 1 cup pumpkin puree (I added 1/4 cup extra)

* 1 teaspoon vanilla extract

* 1/4 cup buttermilk 

* 1 tbsp apple cider vinegar (optional )


Method:

Preheat the oven to 350° F. Line a 9-inch loaf pan with parchment paper, then grease the parchment paper with cooking spray.

 In a bowl, whisk together the flour, baking powder, salt, baking soda, and pumpkin pie spice. Set aside.

 In a separate medium bowl, whisk together the melted butter, sugar, yogurt, pumpkin puree, vanilla, and buttermilk.

Add the wet ingredients to the dry ingredients and mix just until combined. Pour the batter into the prepared baking pan loaf.

Bake for about 50 -55 minutes, or until a toothpick inserted in the center comes out clean. Remove the bread from the oven and allow it to cool in the pan for 10 minutes.
