Pad Thai

Ingredients:

16 oz flat rice noodles

6 Tbsp oil

1 packet Tofu cubes

2 cup fresh bean sprouts

2-3 red bell pepper, thinly sliced

1 cup dry roasted peanuts

1 cup fresh cilantro, chopped


For the Pad Thai sauce:

2 Tbsp soy sauce

10 Tbsp light brown sugar

4 Tbsp rice vinegar (or 2tbsp tamarind paste)

2 Tbsp Sambal oelek, or more, to taste

4 Tbsp creamy peanut butter


Method:

Cook noodles according to package instructions, just until tender.  Rinse under cold water.

Mix the sauce ingredients together. Set aside.

Heat oil in a large saucepan or wok over medium-high heat.

Add tofu (air fried) and bell pepper. Cook for 3-4 minutes

Add noodles, sauce, bean sprouts, and peanuts to the pan (reserving some peanuts for topping at the end). Toss everything to combine.

Top with extra peanuts, cilantro and lime wedges. Serve immediately!
