Mint Coconut & Vegetables Rice




Ingredients

jeera 

shah jeera 

Cinnamon 

Bay leaf

 Javitri 

star anise 

 Ginger  Hing 

Tomatoes 

Peas

 Carrot

 Potato

 Mint

 Coconut  

Rice

 Dahi 

 Garam Masala 

Dhaniya 

Mirch


Method: 


In oil, I add jeera, shah jeera, cinnamon, bay leaf, javitri, and star anise and add ginger after it  browns 

Add Hing after it cooks a little. Add tomatoes, salt and let it become soft 

Then I add veggies ( peas, carrot n potato ) 

Then let it cook a little 

Meanwhile, make a paste of mint with a handful of coconut, I used a big bunch for two cups of rice 

Add this to veggies cook it for a min 

Also adding a spoon of Dahi gives a nice flavor 

Add spices garam masala, Dhaniya, and Mirch 

Then add rice and roast for a moment 

I soaked rice for 20 mins 

And add the double amount of water (hot ) and let it come to boil n reduce the heat n cook for 5 mins n switch of the gas

Let it stand for a few mins before u garnish with ghee and Dhaniya

U can also make it in  ghee altogether
