Ingredients

2 cups flour 

1/4 cup ghee

Salt one teaspoon

Ajwain few pinches 

Moong dal 1 cup soaked 

Ginger 1 tablespoon 

Masala powders to taste 

Red chili 

Coriander seeds 

Haldi

Garam masala

Fennel seeds, jeera, 

Mango powder

Kasoori methi

1/2 teaspoon hing 

Sesame seeds optional 


For dough

Mix melted ghee in flour with salt n ajwain and run it in nicely 

Then add water one spoon at a time and knead the dough,

It shouldn’t be too hard or too soft

Leave it covered 


Mix all masala s

U can use around 1 to 1 and 1/2 teaspoon of each masala or taste 

And grind dal with ginger or U can use ginger powder with all masalas 


Heat oil in a pan add dry masala first then after it turns aromatic add dal paste and keep cooking and stirring for  while, if it’s gets dried add few spoons of water and keep cooking till it looks cooked 

Let it cool

Take the dough, knead it slightly, don’t Overknead it,

Divide it into 16 parts and flatten it with hand and add kachori stuffing and seal it and press with hand again 

Don’t use the rolling pin 

With hand, we are able to judge better where to apply more pressure to prevent stuffing from coming out.

The stuffing should be a little less than the dough.

Oil should be just warm when u drop kachoris in and give it enough time to cook nicely 

Once it puffs up increase the heat and let it get the color and remove it outside 


The key to making nest kachoris is on medium flame 🙏🏼🙏🏼

That’s it ready to offer 


Green chutney 

Grind cilantro, chili’s with kala namak  and jeera and add few drops of lemon 

Add a few spoons of water if required
