Low Sugar Carrot Kheer
Low sugar carrot kheer (Ekadashi friendly)
Ingredients
Carrots -2
Dates-4
Cashew -8
Milk -4 cups
Coconut Sugar -3tsp (for more sweetness you can add 4/5 tsp)
Saffron
Elaichi Powder
Method
2 carrots + 4 dates + 8 cashews pressure cook n coarse blend,
Reduce 4 cups milk to 75%, add above blend.
Add 3 tsp coconut sugar at the end (Can increase to 4/5 tsp if you prefer sweeter, or increase dates)
Add saffron. Elaichi powder
This was a tad less sweeter btw.
You can try with rice/ dal for non- Ekadashi recipe.
