Chili Achar

 



This is a Marwari home recipe for chili achar... it’s very good. You can adjust the recipe according to personal taste. 


4C - finely cut green chilies 

5T - mustard seeds, freshly ground

1T - Haldi

1T - fennel seeds

1T - kalonji seeds

2t - salt (personal taste) 

Pinch of Hing 

1/2 C - freshly squeezed lemon juice


Mix together, place in sunlight for 2-3 days in a sealed glass jar with the lid on. 

Shake each day. 

Should be ready immediately after this time, some people prefer to leave (out of direct sunlight) for another 5-7 days before using.

These are actually the big green chillies, so they are really not very hot. I usually use the small green ones, they are more hot, but after all this process all chillies become quite mild in heat, even children used to mild chilli flavour can have. 

We take this w suhali crackers (I bake them these days) or alongside any meal.
