Baigan Bharta

 





Ingredients

oil

 Grated Ginger

 green chilies

 Hing

 Mustard Seeds

 Cumin Seeds 

 Brinjal

 Tadka

 Peanuts 

Red Chilli

  Coriander powder


For bharta 

There are two ways some add potato as well. Mainly the little choka type.


Here I used the special brinjal ( Jalgao brinjal for bharta) roast on gas. Then drop them in the water this helps the roasted part to come off. In a pan add oil grated ginger cut pieces of green chilies. Add Hing mustard seeds and cumin seeds. Saute then add the roasted ( black portion removed) brinjal. Add salt and turmeric. Mix well on low flame keep covered and cook more. Here the brinjal is a little different so it gets cooked fast compared to the big ones there. Add 1 cut tomatoes and coriander powder. Done. At the end add Tadka with peanuts and 1 red chili. Tastes great. Keep a little spicy if you like.
