Almond whole wheat cookies

 




Almond cookies-


1 1/4 cup whole wheat flour 

3/4 cup whole almonds

3/4 cup sugar- granulated for texture 

5 tbsp butter

1-2 drops almond extract or other food flavors

1 tsp baking soda


Recipe for eggless almond cookies:


Take dry ingredients (All purpose flour/ whole wheat flour, almond flakes/ whole almond powdered,  baking soda, and salt a pinch) in a bowl. You can use almond flour in place of flakes. Mix it well.


In another bowl, take softened butter and sugar. Beat it till it is light and smooth and add some almond extract. Again beat it well.

Add dry flour mixture. Mix in with hands, add 3tbsp cold milk to make the dough.


Meanwhile pre-heat the oven to 350 degrees F or 180 degrees C .Line a baking sheet.  Make your favorite shape from the dough and arrange them on the sheet. Make sure to keep them a few inches apart. They will spread as they bake.


Arrange some flakes on top of every cookie and slightly press with a fork/ fingers so it sticks. Bake into a preheated oven for about 15 to 17 mins until you see a nice color. Enjoy!

Substitute for almond extrac

The original recipe called for almond extract, for flavor. I didn’t have, so I added 1 tbsp pistachio pudding mix( it has almond flavor). You can skip it altogether, add any natural flavors- cardamom or nutmeg. For mild vanilla flavor, I add 1tbsp rooh afza to cake or cookies mix
