Wheatflour & Unbleached flour Pizza
For Pizza base
Take 1 packet of yeast to empty it in half a cup of warm water add 1 tbsp of sugar. Read the instructions on the yeast packet. If it is active yeast, instant yeast, fast-rising yeast.
Add about 3 cups of flour ( either bread flour or regular unbleached flour) here I added half and half i.e 1.5 cups of whole wheat flour and 1.5 cups of unbleached flour. Add salt about 1 tsp. Add about 1 tbsp of butter to the dry ingredients.
Pour the yeast mixture in the flour. Keep warm water ready and use as needed to make a soft dough. Initially, the dough will stick to your hands but keep kneading. Add about 1 tbsp of olive oil and knead again you will get a clean mixing bowl which means no dough sticking to the bowl. Let this dough stay in for proofing for about an hour.
The dough will rise. Punch out the air from the dough. Grease your hands and start flattening the dough in the baking tray. Some of them roll it. I just spread the dough direct over the pan making each side equal in thickness.
This is the base.
2nd step
Make pizza sauce by taking tomato puree ( store brought or blend tomatoes without water and cook them till water is dried up.) add little salt snd olive oil add Italian herbs.
Spread this over the pizza base.
Let it proof
Meantime cut all the veggies needed like olives, tomatoes, peppers.
Assemble the pizza.
During all this cutting and sauce making pizza base gets second proofing. Spread the sauce lightly add Mozzarella cheese all over the base add the chopped veggies and bake at 450 for 20 minutes minimum. Check as per your oven instructions.
