Sponge Cake
There are lots of different cake recipes out there, depending on
the style, occasion, and taste you are looking for. Below is a recipe for an
easy sponge cake, where you can choose your own filling.
Ingredients:
2 sticks of butter, softened
1-⅛ cup fine sugar
1 tsp vanilla extract
1-¾ cup self-rising flour
Splash of milk

1/4 cup oil
1/4 cup yogurt
Powdered sugar for dusting

Instructions:
1. Heat
the oven to 350°F and butter and line the base of two 8-inch cake pans with
parchment paper
2. Beat
the butter and sugar together until it becomes pale and fluffy,
3. Sieve
the flour into the mixture and stir in the vanilla extract, milk and a pinch of
salt, mixing until completely combined
4. Divide
the mixture equally between the two tins and bake in the center of the oven for
25–30 minutes. To check whether the cakes are baked, insert a toothpick into
the middle of each cake mixture — if it comes out clean then the cake is ready
to come out of the oven
5. After
10 to 15 minutes, remove the cakes from their tins and place them on a wire
rack to cool. When they are no longer warm, place one cake on top of the other,
with your choice of filling in between, and lightly dust with icing sugar to
finish
