Masala Rava Idli

For Masala Rava Idli: In a pan, heat oil, add mustard seeds & after it splutters, add urad dal, hing, curry leaves torn, cashew nut halves & roast lightly & remove to a bowl. In some oil, saute one tomato chopped with salt, red chili pw, turmeric pw till soft & add to the bowl. Add 1 grated carrot, add ginger chopped or ginger paste
, Roast 2 cups sooji (coarse Bombay Rava or Upma Rava also works) & add to the bowl. Add 2 cups of beaten yogurt to the same bowl. Mix well & add some water if needed. Boil the water in steamer vessel & grease idli moulds. Add 1/4 tsp of baking soda in the Rava mixture & mix. Let it sit for 5 min. Pour into idli molds to fill 75% (since it will raise after steaming). Steam for 10-15 on medium flame & switch off gas & leave-in steamer for another 5 min. After that, remove & demould idlis & serve topped with ghee & a side of chatni of your choice. If the idli is sufficiently spiced, we don't need a chatni also.
