Maddur Vade



For a small batch of 8 vadas you will need:                                                                         
1 1/4 cup rice flour
1/4 cup maida
1/4 cup rava/ sooji
1 cup finely chopped purple cabbage
4 green chillies finely chopped
salt, hing - 4 dashes
1/3 cup skinless broken peanuts
1 tsp white til/ sesame seeds,
1/4 tsp jeera
Curry leaves -2 sprigs chooped
Coriander leaves chopped - 1/4 cup
1 inch ginger- grated
1/8 tsp cooking soda -optional
1 ladle oil (for mixing, do not heat)
Oil for deep frying

Mix all of the above ingredients. Add some water if required. Bring it to a chappati dough consistency.
Take a smal balls, flatten it out on oil smeared plastic sheet. It should be as thin as possible. Poke it with a fork at few spots to prevent puffing.
Deep fry till golden brown on both sides. Serve with tomato ketchup or chutney.
